Potato corn chowder – just throw it all in and run on high pressure for 5 minutes (10 was too much)
Thai Peanut Chicken – replaced chicken with frozen, pre-cooked shrimp; high pressure for 1 minute; fine to add onions and other veggies; after pressure cook, add cornstarch, water, and lime juice and finish on the stove (could the pressure cooker finish it instead on a non-pressure setting?); serve with tons of rice

Slow Cooker Recipes

Thai Chicken Curry
Black beans (from dried)

To try:

Bulk beans and rice with hamhock [Brad Barta] get boneless hamhock if possible (shred after most of slow cooking); HEB 16-bean mix with (in dry bean section), has its own seasoning packet; slow cook 10 hours; good w/ and w/o ham; serve with rice, tortillas, avocado, taco milagro chips, and/or salsa

Recipes in 15 words or less (in theory)

Lindenberg Salad [Anni Lindenberg Knox] – Greens, sesame seeds, cranberries, feta, dressing. Optional: avocado, tomatoes, or cilantro.

Mexican black beans [Brad Knox] – Sauté cumin and chili powder in canola ’til aromatic. Dump in can of black beans. Mash 10min. Serve with warmed tortillas, salsa, queso fresco, and chopped cabbage. From here. Alternative: pinto beans with sautéed bacon, mushrooms, and onion.

Salsa [Brad Knox] – Chop roma tomatoes, onion, and cilantro. Add lime juice and salt. Chopped jalapeños or serranos optional.

Guacamole [Kristen Thurman] – Chopped onion, tomatoes, bell pepper, and cilantro. Add lime and salt. Mix in avocados.

Siena Katz – Drain black beans, chop tomatoes, corn, cilantro, red onion. Mix with olive oil, lime juice, salt. Ideally it should sit in the fridge for a bit. But you can eat it as salad or dip. And I like to add some cumin and chili powder.

Black bean stew [Duvey Rudow] – Boil black beans, onion, carrot, garlic, peppers in chicken stock. Tender? Blend half with cilantro. Combine.

[Brad Knox] – Slice tomatoes and feta. Stack. Add olive oil, minced rosemary, and salt.

Terry Woodroffe – Steep mushrooms in oil, lemon, garlic, thyme, salt. Toss with hot noodles, sprinkle parm cheese.

Joanna Cutler – throw chicken, frozen oj, soy sauce, garlic, ginger, in a baking dish in fridge to marinate (overnight or for a few hours). bake 1/2 hour on 450. serve w/ rice and steamed broccoli.

Brian Glass – [crepes] 6 eggs, 3 cups milk, 2 cups flour, ½ cup sugar. Beat, pour 1/4 cup, heat, flip

Richard MacKinnon – Braise chicken faves in 2:1 vinegar:soy, garlic head, peppercorns, bay leaf, brown sugar–over rice

Siena Katz – Slice potatoes and onions, wrap in foil packets with oregano and olive oil. Grill packets.

Stephanie Knox – oven 450 season chicken breast 20-24 min (depending on size) couscous with steamed broccoli as a side otherwise asparagus under broiler for 12 min with salt pepper and lemon

Internet – [Roasted Chickpeas] – Toss can rinsed/dried chickpeas, olive oil, salt, and Creole/cumin/paprika. Roast  400°F for 35min.

Siena – Place chicken thighs on lemon slices. Brush olive oil. Sprinkle salt and herbs. Bake 450

Siena Katz – Sauté shrimp, garlic, lemon juice in butter/olive oil. Serve on pasta with chopped parsley.

Popcorn with Parmesan and Thyme – Toss plain popped popcorn with olive oil, grated Parmesan, chopped fresh thyme, and lemon juice.

Internet – [Pesto] Blend 0.75c olive oil, 0.75c Parmesan, 2c basil leaves, 3 minced garlic cloves, and 0.25c pine nuts. 

Internet – [Avocado Crostini] Mashed avocado, olive oil, salt, and pepper on toasted bread.

Siena Katz – Avocado, lemon juice, olive oil, salt in blender til creamy. Mix with cooked soba noodles. (More salt, lime, and olive oil next time.) Try adding rosemary, feta, and/or sliced tomatoes.

Ben Balmer – Sear steak in pan and rest, Sautee onions mushrooms, garlic, with dijon, worcestershire. Flombe with whiskey, add quarter cup of cream, put on top of steak.

Claire Sommers Buck – Frozen watermelon, water, lime juice, sugar, blender.

Katie Genter – whole wheat pita with olive oil, za’atar, pepper, garlic salt. 400 oven until slightly toasted

Siena Katz – amatriciana sauce: Crisp chopped bacon – Add chopped onion, sauté, then canned chopped tomato. Cool down, add pepper. Good with bucatini.

Siena Katz – Heat chicken broth, dashi, soy sauce, sesame oil, garlic. Add fresh udon or ramen, seaweed.

AC Loya – Saute onion, cubed zucchini, corn, then add milk, tomato, and cubed cheese (s&p to taste)

Karthik Dinakar – [Antioxidant daal] Pressure cook 1.5c dal lentils, turmeric, cumin, pepper, olive oil, walnut oil, avocado oil, and salt. Cool under pressure. Add 2c water and 3c vegetables (carrots, zucchini, tomato, etc.). 10min very low heat. Eat like soup.  Add asafetida to decrease flatulence and help digestion.

Joseph Bamber – [Banana frittata] Mash 2 bananas. Add 4 eggs, 1 tsp flour, sugar, vanilla, cinnamon, 1 c walnuts. Pan fry, flip to cook both sides. Can substitute flour with protein powder.

Kristen Thurman – Steam rice, Chop veg, slice chicken/beef, heat wok, add oil, stir-fry, season to taste. We use a rice cooker / steamer… I use less water than typical, I like rice more on the dry side. I also add about a table spoon of coconut oil, salt and a cardamom pod.

Juan Sequeda – Steak. Salt. Pepper. Hot Pan. Grill. Butter. Rosemary.

Heather Segars – Fresh salmon coated in olive oil, salt and pepper. 425 for 15 min. Squeeze lemon. Add some brown rice and green beans.

Ken Strachan – Grilled Cheese: bread, butter, cheese.

Siena Katz – Coat raw salmon in sugar/salt/vodka. Top with sliced lemon. Cure in fridge 3 days.

Andre LaMothe –  Organic Turkey Wraps – hummus, turkey, pickles, lettuce, olives, etc. + ranch dressing and large tortilla.

Siena Katz – Marinate chicken in Dijon balsamic vinaigrette. Grill.

Florence Wong – Sear pork belly slices in hoisin. Add cilantro, pickled cucumber/carrots, tortilla for tacos.

Siena Katz – Sear tuna steaks. Serve on rice with soy sauce, toasted sesame seeds, thinly sliced scallions.

Siena Katz – Layer: mashed potatoes, browned ground beef (add Rosemary), sautéed mirepoix + corn, potatoes again, cheddar. Bake.

Andrew Stout – Muddle lime wedges. Add cachaça, turbinado simple syrup, crushed ice.

Siena Katz – Caramelize chopped cabbage and onion in bacon fat. Serve with pierogi. Top with sour cream.

Melissa Whitaker – Preserved lemons: score Meyer lemons, stuff with salt, tightly pack into mason jar, leave > 1 month.

Joanna Bryson – Shortbread: equal parts flour sugar butter

Spicy Maple Nuts – Mix 2 cups each pecans, almonds, and walnuts with ¼ cup maple syrup, 2 tbs. olive oil, 2 tbs. chopped herbs, and ¼ tsp. cayenne. Bake for 15 minutes at 350°F.
