Sandwiches
Gourmet McMuffin – Toast bread. Cook egg. Stack turkey breast, egg, cheese. Add garlic aioli. Optional: avocado slices, tomato slice, spinach, Dijon mustard. Alternatives: English muffin, bagel, sourdough.
Pasta
Pasta with Italian turkey sausage and spinach – Boil pasta. Brown turkey sausage. Add minced garlic, spinach, olive oil. Toss Parmesan, salt, pepper. Optional: lemon, red pepper flakes. Alternatives: pesto, kale, cherry tomatoes.
White bean pasta – Sauté garlic in olive oil. Add canned white beans, sauté 3–4min until warmed through. Add greens, toss with pasta and a splash of pasta water. Optional: red pepper flakes, lemon zest, or Parmesan. Alternative protein: chickpeas, frozen edamame (thawed), or a fried egg on top.
Oven
Sheet-pan chicken thighs – Toss thighs and veg in olive oil, salt, pepper. Roast 425°F 35min skin-up. Optional: paprika, cumin, lemon, thyme, or potatoes and onions. Serve with rice or bread. Alternative veg: cauliflower, green beans, or sweet potatoes.
Sheet-pan salmon – Coat salmon and chopped veg in olive oil, salt, pepper. Roast 400°F 15min. Squeeze lemon. Optional: soy sauce, sesame oil, chili crisp, or scallions. Serve with rice. Alternative veg: broccoli, zucchini, or sweet potato.
Skillet
Egg fried rice – Refrigerated rice, high heat, oil. Push aside, scramble eggs in. Soy sauce, sesame oil, scallions. Optional: frozen peas or corn. Alternative: add leftover chicken or shrimp.
Potatoes, chicken sausage, cabbage skillet – Brown chicken sausage. Add sliced potatoes, cover till tender. Add cabbage. Add salt, pepper, vinegar. Optional: mustard. Alternatives: onions, apples, smoked paprika.
Stir-fried chicken and vegetables – High heat. Oil, garlic, ginger. Add chicken breast strips, then frozen veg. Soy sauce, sesame oil. Serve over rice. Optional: sriracha, lime, sesame seeds, or cashews. Alternative protein: shrimp, tofu, or salmon. Alternative sauce: teriyaki or hoisin.
Black bean tacos – On skillet 3–4min on medium, drained canned beans with cumin and chili powder until warm. Shred cabbage. Slice avocado. Pile on warm tortillas. Squeeze lime. Optional: mash beans slightly in pan, salsa, crumbled queso fresco, pickled jalapeños, or cilantro. Alternative: shrimp or rotisserie chicken.
Soups and stews
Rotisserie chicken noodle soup – Simmer chicken broth, rotisserie chicken, frozen mixed vegetables. Add noodles. Add salt, pepper, lemon. Serve with bread or rice. Optional: dill, grated Parmesan. Alternatives: rice, tortellini, miso.
Red lentil soup – Sauté garlic and cumin. Add in Instant Pot to dry red lentils, diced tomato, broth. 8min high pressure. Squeeze lemon. Optional: top with olive oil and smoked paprika. Alternative: coconut milk instead of broth for a Thai version.
Potato corn chowder – In Instant Pot, add turkey bacon, onion, minced garlic, cubed potatoes, corn, stock, thyme, cayenne, salt, pepper, whole milk yogurt, flour. 5min high pressure. Optional: other veggies can be added, chives; blend 1–2 cups, then stir back in. Modified from recipe.
Salads
Green salad – Lettuce, olive oil, lemon, salt, pepper. Optional: Parmesan, cherry tomatoes, cucumber, red onion, croutons, avocado, or soft-boiled egg. Alternatives: balsamic vinegar, red wine vinegar.
Cucumber-tomato salad – Cucumber, tomato, olive oil, red wine vinegar, salt. Optional: feta, oregano. Alternatives: lemon, balsamic vinegar.
Nuts and berries salad – Mixed greens, dried cranberries, pecans toasted in dry skillet 3–5min. Olive oil, lemon, salt, pepper. Optional: feta or goat cheese, red onion, honey in dressing. Alternative berries: fresh blueberries or strawberries. Alternative nuts: walnuts or almonds.

Potato corn chowder – just throw it all in and run on high pressure for 5 minutes (10 was too much)
Thai Peanut Chicken – replaced chicken with frozen, pre-cooked shrimp; high pressure for 1 minute; fine to add onions and other veggies; after pressure cook, add cornstarch, water, and lime juice and finish on the stove (could the pressure cooker finish it instead on a non-pressure setting?); serve with tons of rice

Thai Chicken Curry
Black beans (from dried)
Recipes in 15 words or less (in theory)
Lindenberg Salad [Anni Lindenberg Knox] – Greens, sesame seeds, cranberries, feta, dressing. Optional: avocado, tomatoes, or cilantro.
Mexican black beans [Brad Knox] – Sauté cumin and chili powder in canola ’til aromatic. Dump in can of black beans. Mash 10min. Serve with warmed tortillas, salsa, queso fresco, and chopped cabbage. From here. Alternative: pinto beans with sautéed bacon, mushrooms, and onion.
Salsa [Brad Knox] – Chop roma tomatoes, onion, and cilantro. Add lime juice and salt. Chopped jalapeños or serranos optional.
Guacamole [Kristen Thurman] – Chopped onion, tomatoes, bell pepper, and cilantro. Add lime and salt. Mix in avocados.
Siena Katz – Drain black beans, chop tomatoes, corn, cilantro, red onion. Mix with olive oil, lime juice, salt. Ideally it should sit in the fridge for a bit. But you can eat it as salad or dip. And I like to add some cumin and chili powder.
